Thousands of gallons of cream go into the cream puffs at State Fair

MILWAUKEE - The Wisconsin State Fair opened its gates for 2013 Thursday morning.

There are 70 new foods, including 21 on a stick this year. But we all have our staples, and perhaps the most iconic is the creampuff.

In 2012, more than 375,000 cream puffs were sold. It's a lot of puffed cream!

“Prairie Farms will pre-blend, and it’s all custom-blend,” said Kathleen O’Leary with State Fair. “Upwards of 11,000 gallons of cream for the cream puffs over the course of the 11 days.”

There is a big change this year. Herb Kohl's Milk Tent has moved just to the east of the Journal building by the Milwaukee Mile Grandstand.
