Food vendors making last-minute preps for State Fair's opening day

WEST ALLIS - There's a food frenzy going on at State Fair Park. Food vendors like Knucklehead Pub & Grill are scrambling to make sure they're prepared for the thousands of visitors during the fair's eleven day run.

Owner Scott Dooley said this is his restaurant's first year at the Wisconsin State Fair.

"We've been prepping and getting ready for the last two months." Dooley said.

He said volume is key. That means making sure there's enough of one of their most popular deep fried goodies, called 'Lug Nuts" - It's a deep fried tater tot with hot peppers wrapped in smokey bacon.

Dooley said they have prepared more than 10,000 in advance.

The Wisconsin State Fair will open Thursday morning at 8:00 am.
