Dirty Dining: Jose's Blue Sombrero
BROOKFIELD -- A Waukesha County spot popular for its Mexican fare has some food temperature problems.
At Jose's Blue Sombrero on Bluemound in Brookfield, Diego Vasquez, the general manager, talked with TODAY'S TMJ4 about its most recent health inspection.
The inspection noted coolers running way too warm -- one was at 57 degrees. Tomatoes, cheese and sour cream were not kept cold enough. Another cooler was at 53 degrees and a walk in cooler also too warm at 48 degrees.
Standards say all coolers should be set at 41 degrees or colder.
Vasquez said the opening and closing of the coolers, as well as the restocking of them in the morning, leads to warmer temperatures. He insisted they do monitor the temperatures, just not every hour as suggested by the health inspector.
George Flees, with the the restaurant's corporate office, said when the inspector went through, all the assessed food was being prepped. He said it was just put back in the fridge and did not have time to cool off.
"Jose's Blue Sombrero's main concern is our guest safety and cleanliness," Flees said.
The report also noted that cutting boards in the kitchen needed to be replaced or resurfaced, something Vasquez said they have already done. The restaurant was also ordered to clean floors under the grill line. Vasquez refused to allow cameras in the kitchen.
Also having problems, Wong's Kitchen on 92nd and Capitol. On Dirty Dining once before, this time an employee washed their hands but did not use soap.
Grill City on Atkinson near 27th was "all clean" on this health inspection.
