Cheesemaker to halt production of raw-milk cheese because of pending regulation
DODGEVILLE -- A popular cheesemaker in Wisconsin announced this week that it will no longer make their line of raw mil cheeses because of uncertainy surrounding new FDA regulation set to come down soon.
Uplands Cheese told the Journal Sentinel they hoped the production of their Rush Creek Reserve line would only be temporary while they wait for guidance from the FDA.
Lead cheesemaker Andy Hatch says food safety agencies have been "unpredictable, at best" when it comes to guidelines for raw-milk cheeses.
Hatch did not give a timeline for when the company's line of raw-milk cheeses could move back into production.
