A Bastille Days delicacy: snails

MILWAUKEE - Got plans for dinner?  How about a few snails?

"We (sell) a lot of snails," said Andy Tenaglia, the owner of Lagniappe Brasserie in New Berlin. The restaurant tent is located near Kilbourn Ave. and Van Buren St. during the Bastille Days festival.

"(Escargot) is the one staple at our restaurant," Tenaglia said.  "We change our menu every day, but (snails) are always on it." 

Tenaglia cooks garden snails from France with fresh shallots, garlic, fresh lemon, and a high quality butter.

"Most people aren't looking for the taste of the snail," he explained.  "They're looking for the garlic and the lemon (taste)."

It may not be for everyone, but Tenaglia said most 'first-timers' come back for seconds.

"Almost everybody enjoys it," he said.  "Occasionally we'll have a few squeamish (customers).  But the snails are so tender and delicious that people tend to come back for another order."
